Ingredients:
The filling:
4 c haskaps
1 1/2 c sugar
3 tbsp corn starch
1/2 tsp cinnamon
The Crumble
1/2 cup (100g) packed light or dark brown sugar
6 Tablespoons (46g) all-purpose flour
1/2 teaspoon ground cinnamon
5 Tablespoons (71g) unsalted butter, very cold and cubed
1/2 cup (40g) old-fashioned whole rolled oats
Directions
I found that using the berries directly, produces too much juice, so I prepare the filling on the stove top first, then bake.
Place the ingredients for the filling in a sauce pan, over moderate heat and stirring often, heat until bubbling and thickened. I let this cool a bit before filling the pie crust.
Prepare the bottom crust, fill with the berries.
Mix up the topping ingredients, and spread over the top of the pie filling.
Bake at 375F for 45 to 60 minutes until the pie crust is nicely browned. I usually check the progress at 45 min, and evaluate if more time is needed.
