Mint Sauce

Ingredients:
3 bunches of fresh mint (30g each)
2 teaspoons golden caster sugar
50ml red wine vinegar
pinch of salt

Directions:
Step 1: Prepare the Mint
Wash the Mint: Start by thoroughly washing the fresh mint leaves to remove any dirt or impurities.
Chop the Mint: Finely chop the mint leaves. You want them to be as fine as possible for a smooth sauce.

Step 2: Make the Sauce
Dissolve the Sugar: In a small bowl, add the sugar and boiling water. Stir until the sugar is completely dissolved.
Add the Vinegar: Pour the vinegar into the sugar mixture and stir to combine.
Mix in the Mint: Add the finely chopped mint leaves to the vinegar mixture. Stir well to ensure the mint is evenly distributed.
Step 3: Season and Adjust

Season with Salt: Add a pinch of salt to the sauce, stirring to incorporate. Taste and Adjust: Taste the sauce and adjust the sugar or vinegar according to your preference. If you like it sweeter, add a bit more sugar. For more tang, add an extra splash of vinegar.

Honey Mint Sauce: Substitute sugar with honey for a richer, more complex sweetness.
Citrus Mint Sauce: Add a splash of lemon or lime juice for a citrusy kick that pairs well with fish.
