Ingredients:
1 small onion very thinly sliced
3 1/2 lb roast boneless chuck (If using a smaller roast, perhaps reduce the amount of liquids. When I made this in Feb 2025, I had two containers remaining for later use.)
1 tsp salt
1 tsp black pepper
4 cloves garlic thinly sliced
2 c red wine…one you would drink
2 (14 oz) cans diced tomatoes undrained
1 c beef broth
1 tbsp Worcestershire sauce
1 tbsp dried rosemary
1 tbsp dried oregano
1 tbsp dried basil
2 tsp thyme
1 tsp salt
1 tsp black pepper
3 tbsp tomato paste
Method:
Place half of the onions into the bottom of your slow cooker. Season the roast on all sides with the first salt and pepper. Lay the roast on top of the onions. Put the remaining onions and garlic on top of the roast.
Mix the remaining ingredients in a bowl, the place on the roast. Cover and cook on low for 8-10 hours.
