Ingredients
- 2 lbs cod fillets
- 2 cups flour
- 1 Tbsp baking powder
- 1 tsp kosher salt
- 1 bottle plus a quarter of a bottle Guinness
- 1/4 cup cornstarch
- vegetable oil for frying
Cooking Instructions
In a large bowl, combine flour, baking powder and salt. Mix well, add the beer and whisk until smooth. Allow to sit for at least 10 minutes.
Dredge the fish in cornstarch. Dip the fillets in the batter and allow the excess to run off, otherwise the fillets will be too thick and won’t cook through properly.
Heat oil to 375 in a counter top fryer, dutch oven or large cast iron skillet. Carefully slip the fillets into the hot oil. Allow to cook on one side for 3 to 4 minutes. Flip over and allow to cook for another 3 to 4 minutes. Remove from pan, drain on paper towels, then serve immediately.
