I grew up loving these in NB. My Gram made these for us sometimes even for the evening meal. Food stimulates memories for me.
The dish, takes hot buttered biscuits placed in a bowl then add hot stewed blueberries poured over top. As a kid, served with a cold glass of milk.
The biscuit ingredients:
2 c flour
4 tsp baking powder
1/2 tsp cream of tartar
1 Tbsp sugar
1 tsp salt
1/2 c butter
1 c milk
Method:
Place flour, baking powder sugar, salt in a bowl. Add butter then cut in pea sized pieces. Add the milk or for special treat, buttermilk or cream for really rich biscuits. Once mixed into a soft dough, not too much mixing, roll out to about ¾ inch thick. Cut in to rounds with a cutter, but I use a small glass about 1.5 inches in diameter. Place on a baking sheet and bake in preheated oven of 425 F until browned about 13 minutes.
While the biscuits, I take about 2 cups of blueberries in a sauce pan, with about ¾ c of sugar and stew at a medium heat. The berries juice up in about 10 minutes and are ready for the biscuits when they come out.
