I really like the crystalized ginger. This recipe makes a DOUBLE BATCH and can be halved
2 c soft butter
2 c brown sugar
2 eggs
2 tsp vanilla
3 c crystalized ginger
4 tbsp ginger
3 c flour
1 ½ tsp baking powder
1 tsp salt
Cream butter, eggs and sugar. Then add dry ingredients. Drop by the teaspoon onto ungreased cookie sheet. Bake at 350 F for about 13 minutes until golden.
