makes 5 1/4 cups

Ingredients:
3 1/2 c peeled ginger finely chopped(about 1.2 kg)
4 c water
5 c sugar
1 pkg Certo (not light)

Directions:
Cook ginger in pressure cooker for 20 minutes. Strain and retain 1/2 c of ginger liquid. Place in preserving pan with sugar and Certo. Bring to hard boil stirring constantly. Boil for 1 minute. Let stand for 5 minutes, skim off foam and stir.
Place in sterilized jars.
To make a double batch, you can cook the ginger, but split in two after that.

Left over ginger not used, can be frozen then used in cooking.
