Here’s a tip….when doing a braise, or pot roast, don’t choose a roast that is lean. Your dinner will be better served to use one that has a little fat particularly riddled. For a pot roast I tend to favour a cheaper cut like blade or even cross rib. For a good roast my favourite is Prime Rib hands down. And my favourite steak is rib steak, next would be t-bone or NY Strip loin.
