I find my extruder needs a more dense dough than I use for my ravioli. So here’s my reminder and the Kitchen Aid recipe:
3.5 cups of flour
4 large eggs
1 tbsp water
1 tsp salt
I mix in my KA, to where a good ball forms. Let it rest for 20-30 minutes before extruding in the machine. Yield is about 1.25 lbs of dough.
