Ingredients:
1 loin roast
1 apple diced
1/2 onion diced
1 c grated cheddar cheese
1 tsp sage

Instructions
Slice through the roast so you split it like a book. Then cover and flatten it so it is about 1 cm thick. This is to have a nice surface to place the stuffing.

Mix the diced apple, onion, sage and cheddar together and spread over the surface of the roast. Roll the roast and tie with butchers string.

Roast at 350F until done, about 150F internal.
