2 tbsp butter
½ c maple syrup
¼ c walnuts coarsely chopped
2 c flour
3 tsp baking powder
1 tsp cinnamon
½ tsp salt
3 tbsp syrup
½ c oil
1 egg

Warm butter and syrup in small pan. Place 2 tsp of this in the bottom of the muffin tin. Sprinkle a tsp nuts in as well.

IN bowl, beat egg, oil, milk and syrup. Add dry ingredients and mix well. Fill the muffin tins 2/3 full and bake at 425 F for 20 minutes. When done, turn upside down on cooling rack putting foil underneath to catch drips. Remove from pans before the muffins are stuck like concrete.
