Start with a mixing bowl of bread pieces (about 4-5 cups)
3-4 mashed potatoes (cooked and Mashed)
1 Cup of diced onions
1/2 cup chopped celery (my addition)
2-3 tsp poultry seasoning or sage (to taste)
salt and pepper to taste
a cup of boiling water…..or more to make the mixture moist

Mix, well, stuff the bird

I have since made some additions to the mixture now. I microwave the potatoes and smash them out of their skins.
Then I use a 2 cup pyrex cup for my onions….about 1 ½ c, ¼ cu of butter and 2 stalks of chopped celery, microwave these for two to three minutes.
Sometimes I vary the liquid though, a tsp of chicken oxo, and/or a cup of white wine instead of the water.

Hardly anyone here uses potatoes in their stuffing, but most who try it like it because its so moist.
