Ingredients
Approx 2 1/2 cups of all-purpose flour
1/2 cup oatmeal
1/4 cup multi-grain cereal (like red river cereal)
1 Tablespoon of flax
2 Tablespoons of ground flax
1 egg
1/2 Tablespoon salt
2 teaspoons instant yeast
1 Tablespoon of brown sugar
1 Tablespoons canola oil
1 1/2 cups of luke-warm water

Place 2 cups of flour and all other ingredients in a bowl and mix well. Work in remaining flour until dough pulls away from side of bowl. Turn onto floured surface and knead until dough is smooth and elastic. Place in bowl and cover with a damp dishtowel. Leave until dough has doubled in size (approx 1 hour). Vigorously punch the dough down. (Note- this is a very therapeutic thing to do if you’ve had a bad day!) Turn the dough out onto a floured surface and divide in half. Shape into a loaf adding more flour if necessary. Place in a greased loaf pan. Cover with damp tea towel and leave until the dough has doubled in size (approx 30 minutes). Bake in a 350 F oven for 30-35 minutes until golden brown. Turn out onto racks to cool.

This recipe makes one loaf.

I make it in our bread machine, setting the machine on dough and let it mix and rise. When it’s gone through the dough cycle I take it out, shape into a loaf, let it rise, and bake it in the oven.
