This recipe I had not know of until Sharon introduced me to them….then on a trip to meet her family, Sharon’s brother Matt gave me a hint to have nicely browned ones. Here goes:
Heat your pan with oil at 400F while the potatoes are boiling, (I prefer a shallow metal pan, but a pyrex pan will work also, but does not brown quite so well) with enough oil/butter (to cover the bottom)of your choice…all butter may burn. I use a blend of olive and butter.
6 potatoes, peeled and chunked into 1 cm thickness
Boil the potatoes for 10 minutes. Then drain, cover and give ‘em a shaking to loosen up some ‘bits’. Add these to the pan with the hot oil. Careful not to splash yourself with the hot oil.
Spread the potatoes around the pan, and sprinkle with Paprika (Matt’s hint). Then turn the potatoes over, and sprinkle with Paprika again.
Bake in 400 F oven, for 30 minutes, then turn the potatoes and bake for an additional 30 minutes or until nicely browned and crispy. Serve with the roast of your choice.
