In the last few years I’ve taken to making my own sausages, and trying my hand at smoking various cuts of meats. There are a few things that I keep repeating, but I am still trying new recipes so my list will continue to evolve. It only takes a change in smoke and you will have a different flavour imparted to the meat, or even cheese.

My main sausage is the English Banger. This one I keep making over and over.

I have an electric smoker, and I really like the product that I make. Bacon, Pepperoni, ribs, pastrami are all good. Worth the effort!
