• 3/4 cup softened Butter
  • 1 cup white sugar
  • ¼ cup Molasses
  • 2 Large eggs
  • ¼ cup of chopped candied ginger (optional)
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 2 Tbsp ground ginger
  • 1 Tbsp cinnamon
  • Pinch of cloves
    Directions

Cream butter and sugar in large bowl.
Add molasses and eggs and mix well.
Combine flour and baking soda and spices. Add half a cup at a time to creamed mixture, mixing well after each addition.
Stir in candied ginger
Bake in 350°F (175°C) oven for 12-14 minutes until golden. Let stand on cookie sheets for 5 minutes.
Place on wire racks to cool. Makes about 36 cookies.
