Sharon introduced me to these, and now I don’t want to have roast beef without it. This recipe I’ve borrowed from Jamie Oliver.
Ingredients:
3 eggs
115 g flour
a good pinch of salt
285 mL milk
12 tbsp oil(one for each cup)
Instructions:
Mix the ingredients above well(except the oil), put in a jug and hold for at least 30 min. I usually hold it for a couple of hours.
When you’re ready, (resting the roast for about 25 min) put the muffin tin with the 12 tbsp of oil in a hot oven 450 F, for 3-4 min.
Bring out the pan on the rack, pour the batter in each of the cups. Carefully!
Close the door cook for 15 min or to your desired brownness, serve immediately.
